Why it works: Flour and sugar are a kitchen classic. They rank in the top 15% of all ingredient pairs, and cooks put them together in 92,116 recipes. Both carry phenylacetaldehyde, which smells hawthorne, honey. The science ↓

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Boiled potatoes
- Add starch and moisture that help the dough stay soft and hold gas.
- Flour
- Provides the gluten-forming protein that gives the dough its structure.
- Yeast
- Produces carbon dioxide as it ferments, which makes the dough rise.
- Lard
- Adds fat that tenderises the crumb and softens the texture.
- Sugar
- Feeds the yeast and adds a little sweetness and browning.
The step that matters
Shaping until the dough no longer sticks to the board. Kneading develops gluten so the dough holds gas. Dough that is still sticky is under-developed and may collapse or bake dense, so work it until it is smooth and firm enough to hold its shape.
Swap the potato
How well each one fits the dish's main ingredients (flour, sugar):
- Arrowrootfits better
- Beetrootfits better
- Sweet potatofits better
- Potatothe original
Fit is the average pairing score against flour, sugar. Candidates are from the same food group and used in at least 100 recipes.
