Why it works: Wheat and flour are a kitchen classic. They rank in the top 12% of all ingredient pairs, and cooks put them together in 4,373 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients
Directions
Sift the flour into a bowl, reserving 1 cup for kneading later.
Mix the sugar and salt with the remaining flour.
If using compressed yeast, dissolve it in a small amount of warm water.
Add the remaining water and yeast to the flour mixture, then add the softened butter.
Beat the dough vigorously with a strong spoon until smooth and light.
Turn the dough out onto a floured board and knead until smooth and elastic, about 20 to 30 minutes.
Return the dough to the bowl, cover with a clean towel, then with a tin or wooden cover.
Let it rise for about 8 hours at 70°F (21°C).
If the temperature is lower, allow more time for rising; if higher, less time.
When risen, lightly butter 2 bread pans and 1 roll pan.
