Sour Cream Cake

Why it works: Flour and raisin match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Sour Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point. The book gives no cooking times either; the times in the steps were added in transcription, so check for doneness rather than trusting the clock.

Prepare the batter

  1. Preheat your oven to 350°F (175°C).

  2. In a large bowl, mix the sour cream and brown sugar until well combined.

  3. Add the baking soda and egg, and mix until smooth.

  4. Gradually add the flour and spices, stirring until just combined.

  5. If desired, fold in the raisins and shredded citron.

Bake

  1. Pour the batter into a greased cake pan and bake for 30-40 minutes, or until a toothpick comes out clean.

The flavor team

The pairs that carry this dish. Each one is judged two ways: how much their aromas overlap, and how often cooks already put them together.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sour cream
Adds moisture and tang, keeping the crumb tender and rich.
Brown sugar
Adds sweetness and moisture, and deepens the color and flavor of the cake.
Baking soda
Reacts with the acidity of the sour cream to produce gas that lifts the batter.
Egg
Binds the batter and adds structure as it sets in the oven.
Flour
Provides the main structure that sets as the cake bakes.

The step that matters

Stirring in the flour. Once flour is added, overmixing develops gluten and makes the cake tough and dense. Stir only until the flour is just combined, leaving small streaks.

Swap the raisin

The recipe marks raisin as optional. How well each one fits the dish's main ingredients (cream, sugar, egg, flour):

  1. Raisinthe original
  2. Vanillafits about as well
  3. Figfits less well
  4. Strawberryfits less well

Fit is the average pairing score against cream, sugar, egg, flour. Candidates are from the same food group and used in at least 100 recipes.
