Hickory Nut Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the batter

  1. Preheat the oven to 350°F (175°C).

  2. Cream the butter and sugar together until smooth.

  3. Add the water and flour, stirring until well combined.

  4. Fold in half of the beaten egg whites.

  5. Add the hickory nuts, then the remaining beaten egg whites and baking powder.

Bake

  1. Pour the batter into a loaf pan or divide it into two layer cake pans.

  2. Bake until golden brown and a toothpick inserted comes out clean.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Butter
Adds richness and tenderness, and helps the cake feel soft and smooth.
Sugar
Creaming with butter traps air and adds sweetness and browning.
Flour
Provides the structure that holds the cake together as it bakes.
Egg whites
Beaten whites trap air that lifts the batter and sets into a light crumb.
Hickory nut meats
Add a rich, nutty flavour and a chewy texture to the crumb.
Baking powder
Releases gas in the oven, helping the cake rise and become lighter.

The step that matters

Folding in the beaten egg whites. Egg whites hold air only when beaten to the right stiffness and folded gently. Stirring hard deflates them, so the cake bakes flat and dense.
