Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Make the choux dough

  1. In a saucepan, bring 1 cup of water and ½ cup of butter to a boil.

  2. Stir in 1 cup of flour until combined.

  3. Let the mixture cool, then add 3 eggs without beating.

  4. Drop spoonfuls onto a dripping pan and bake at 400°F (200°C) for 20 to 25 minutes.

Make the cream filling

  1. For the cream filling, boil 1 quart of milk.

  2. In a bowl, mix 2 eggs, 1 cup of sugar, and ½ cup of flour with a little cold milk.

  3. Stir this mixture into the boiling milk and cook until thick.

  4. Flavor with vanilla extract.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Starch and gluten build the structure of the dough and thicken the custard.
Eggs
Proteins set the puffs' structure and help the custard thicken.
Butter
Fat tenderizes the dough and adds richness to the puffs.
Milk
Forms the liquid base of the custard filling, adding moisture and body.
Sugar
Adds sweetness to the cream filling.

The step that matters

Cook the custard until thick. Flour starch only thickens fully when the mixture reaches a simmer, so keep stirring while it cooks to prevent lumps and scorching on the bottom of the pan.

Swap the vanilla

How well each one fits the dish's main ingredients (butter, flour, egg, milk, sugar):

  1. Vanillathe original
  2. Raisinfits about as well
  3. Figfits less well
  4. Coconutfits less well

Fit is the average pairing score against butter, flour, egg, milk, sugar. Candidates are from the same food group and used in at least 100 recipes.
