What each ingredient does

Ripe strawberries
Supply the main fruit flavor, natural color, and most of the liquid in the syrup.
Simple syrup
Adds sweetness and body, and its sugar helps the syrup keep longer.

The step that matters

Boil gently for 1 hour. A gentle simmer lets water evaporate slowly and evenly. A hard boil can scorch the sugar on the bottom of the pot, darkening and burning the flavor, and can change the syrup's concentration unevenly.
