What each ingredient does

Concord grapes
Provide the juice, which carries the grape flavour and most of the liquid.
Sugar
Sweetens the juice and helps preserve it once it is boiled and sealed.

The step that matters

Sealing the hot bottles. Pouring the boiling juice into hot bottles and sealing immediately helps drive air out and lowers the chance of spoilage microbes growing inside the sealed bottle.
