Why it works: Sugar and cream are a kitchen classic. They rank in the top 9% of all ingredient pairs, and cooks put them together in 43,450 recipes. Both carry 2,3-butanedione, which smells butter, sweet. The science ↓
Caramel Ice Cream with Almonds
Ingredients
Directions
In a double boiler, heat the milk until it comes to a boil.
In a bowl, beat together the first cup of sugar, flour, salt, and eggs, then stir into the boiling milk.
Cook for twenty minutes, stirring most of the time.
About fifteen minutes into cooking, caramelize the second cup of sugar in an iron or granite saucepan until melted and browned.
Quickly pour the hot caramel into the custard and mix thoroughly.
Remove from heat and let cool, then strain.
Add the quart of cream and flavoring, then freeze.
