What each ingredient does

Powdered arrowroot
Thickens the liquid into a smooth, glossy pudding as it heats.
Malted milk
Adds milky, slightly toasty flavor and body to the pudding.

The step that matters

Make the paste before adding the water. Starch clumps when it hits hot liquid unless it is first dispersed in cold liquid. A smooth paste lets the arrowroot thicken evenly, without lumps.

Swap the cocoa

The recipe marks cocoa as optional. How well each one fits the dish's main ingredients (arrowroot, milk, vanilla):

  1. Chestnutfits better
  2. Almondfits better
  3. Pistachiofits better
  4. Cocoathe original

Fit is the average pairing score against arrowroot, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
