What each ingredient does

Stale bread
Toasting browns its surface, giving the water a toasty flavor and color.
Boiling water
Hot water extracts flavor and color from the toasted bread as it stands.

The step that matters

Toast the bread until quite brown. The toasted, browned surface carries most of the flavor into the water. Pale toast gives a weak, flat result, so the bread should be well browned before it is soaked.
