What each ingredient does

Sour cherries
Provide the fruit base and tartness that balances the sugar in the preserve.
Sugar
Sweetens the preserve and, as it dissolves and concentrates, helps it thicken and set.
Raisins
Add concentrated sweetness and body from their dried fruit pulp.
Oranges
Contribute acidity and aromatic oil from the rind, plus pectin from the pith and pulp.
Ground cinnamon
Adds warm aroma that complements the cherry flavour.

The step that matters

Boil all together until thick. Sugar and fruit pectin set only at sufficient concentration and acidity. Stopping too early leaves a runny preserve, while overcooking can make it stiff and dull in flavour as the sugar caramelises.

Swap the orange

How well each one fits the dish's main ingredients (sugar, raisin, cinnamon, nutmeg):

  1. Vanillafits better
  2. Figfits better
  3. Orangethe original
  4. Lemonfits about as well

Fit is the average pairing score against sugar, raisin, cinnamon, nutmeg. Candidates are from the same food group and used in at least 100 recipes.
