Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Green sweet corn
Provides the main bulk and sweet, tender kernels.
Cabbage
Adds crisp texture that holds up during cooking.
White sugar
Sweetens and balances the sharpness of the vinegar.
Cider vinegar
Provides acidity that gives the salad its tang and preserves it.
Ground mustard
Adds sharp, pungent flavour to the vinegar mixture.
Green peppers
Contributes fresh, slightly bitter vegetable flavour and crunch.

The step that matters

Cook over steam without boiling. Keeping the mixture just below a boil lets the vegetables cook gently and stay tender-crisp. Boiling would soften the corn and cabbage further and can make the texture mushy.

Swap the cabbage

How well each one fits the dish's main ingredients (corn, sugar, mustard, cider, vinegar, pepper):

  1. Capsicumfits better
  2. Horseradishfits better
  3. Broccolifits about as well
  4. Cabbagethe original

Fit is the average pairing score against corn, sugar, mustard, cider, vinegar, pepper. Candidates are from the same food group and used in at least 100 recipes.
