Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture and set into a firm, sliceable pudding when steamed.
Fish
Provides the main body and flavor of the pudding.
Soda crackers
Absorb moisture and add body so the pudding holds together lightly.
Cream
Adds richness and moisture, served as the sauce.

The step that matters

Pressing the soaked crackers. Excess water left in the crackers would thin the mixture and make the pudding loose and watery after steaming. Pressing them dry lets the eggs set the pudding firmly.

Swap the parsley

How well each one fits the dish's main ingredients (fish, egg, cream, pepper):

  1. Nutmegfits about as well
  2. Tarragonfits about as well
  3. Parsleythe original
  4. Celeryfits less well

Fit is the average pairing score against fish, egg, cream, pepper. Candidates are from the same food group and used in at least 100 recipes.
