Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the filling

  1. Boil 12 live crabs in salted water with red pepper for about 20 minutes.

  2. Make a cream sauce by combining ½ pint cream, 2 tablespoons butter, and enough flour to thicken.

  3. Mix the crab meat with the cream sauce, adding salt, paprika, Worcestershire sauce, grated hard‑boiled eggs, and chopped parsley.

Bake and serve

  1. Heap the mixture into crab shells, cover lightly with bread crumbs, and dot with small pieces of butter.

  2. Brown in a hot oven at 400 °F (200 °C) for 10 to 15 minutes.

What each ingredient does

Crabs
Provide the main meat that gives the filling its flavour and body.
Cream
Makes a rich sauce that binds the crab meat and keeps the filling moist.
Flour
Thickens the cream so the filling holds together rather than running.
Hard-boiled eggs
Add body to the filling as they set and help bind the mixture.
Butter
Adds richness and fat, and helps the topping brown in the oven.
Bread crumbs
Form a crisp, golden topping when browned in the oven.

The step that matters

Thickening the cream sauce. Flour must be cooked into the cream until thick before the crab is added. If the sauce stays thin, the filling will be loose and may run out of the shells during baking.

Swap the parsley

How well each one fits the dish's main ingredients (crab, cream, butter, pepper, flour, egg, sauce):

  1. Nutmegfits better
  2. Capersfits about as well
  3. Tarragonfits about as well
  4. Parsleythe original

Fit is the average pairing score against crab, cream, butter, pepper, flour, egg, sauce. Candidates are from the same food group and used in at least 100 recipes.
