Pot Roast Veal

Ingredients

Directions

Prepare and brown

  1. Heat the beef fat in a kettle and add a little salt to prevent sticking.

  2. Fry the veal pieces until browned.

Stew

  1. Add enough hot water to cover the meat and stew slowly over low heat with the lid on.

  2. When the meat is half tender, add salt, paprika, and the sliced onions.

  3. If using potatoes, pare them and place on top of the meat for the last 45 minutes of cooking, turning them as they brown.

Thicken

  1. If desired, use rye bread to thicken the gravy instead of flour.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Veal
Provides the meat that becomes tender during slow stewing.
Onions
Add sweetness and body to the gravy as they cook down.
Rye bread
Thickens the gravy in place of flour, adding body and a mild earthy flavor.
Beef fat
Carries heat for browning the veal and adds rich flavor.

The step that matters

Browning the veal. Frying the meat until well browned builds deep savory flavor through the Maillard reaction. Pale meat added to the liquid yields a blander gravy.

Swap the potato

The recipe marks potato as optional. How well each one fits the dish's main ingredients (veal, onion, beef, rye, bread):

  1. Potatothe original
  2. Tomatofits about as well
  3. Leekfits about as well
  4. Chivefits about as well
