Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Boil the chicken and sweetbreads until cooked.

  2. Cut the boiled chicken and sweetbreads into small pieces.

  3. Chop the mushrooms and mix them with the chicken and sweetbreads.

  4. Combine the mixture with white sauce and cook until soft.

  5. Season the mixture with salt, pepper, Worcestershire sauce, and finely chopped onion.

Bake and serve

  1. Place the mixture in a pudding dish.

  2. Cover the mixture with bread crumbs and small bits of butter.

  3. Bake in a 400°F (200°C) oven until browned.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Chicken
Provides the main body and substance of the filling once cooked and cut small.
Sweetbreads
Add a tender, rich texture to the filling, cooked until soft.
White sauce
Binds the meat and mushrooms together and keeps the filling moist during baking.
Bread crumbs
Form a crisp topping that browns in the oven.
Butter
Adds fat that helps the crumb topping brown and become golden.

The step that matters

Bake until browned. The bread crumb topping needs enough oven heat to brown properly. Pale or soggy crumbs mean the oven was too cool or the topping was too wet, so check the colour before serving.

Swap the onion

How well each one fits the dish's main ingredients (chicken, mushroom, sauce, pepper, bread, butter):

  1. Capsicumfits better
  2. Tomatofits better
  3. Shallotfits about as well
  4. Onionthe original

Fit is the average pairing score against chicken, mushroom, sauce, pepper, bread, butter. Candidates are from the same food group and used in at least 100 recipes.
