Why it works: Garlic and onion match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 29,058 recipes. Both carry furaneol, which smells caramel, strawberry. The science ↓
Boned Turkey
Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the turkey
Use a small sharp saw to open down the back of the turkey, starting from the back of the neck.
Open the turkey flat on a meat board and carefully remove the meat and skin intact from the bones.
Make and stuff
Make a stuffing with the ingredients, using all of the tongues and omitting salt since the tongues are salted.
Stuff the turkey closely with the mixture, filling the legs and wings, then sew it shut.
Roast and serve
Season the outside of the turkey and roast it in the oven at 350°F (175°C), placing parsley and onion in the water of the pan.
Roast slowly, as only the outer meat is raw.
When done, place the turkey on its side and press slightly with a small board weighted on either end for better slicing.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

What each ingredient does
- Turkey
- Forms the main body of the dish, with the meat and skin kept whole after boning.
- Eggs
- Bind the stuffing together so it holds its shape when sliced.
- Cracker meal
- Absorbs juices and gives the stuffing body and a soft, even texture.
- Smoked tongues
- Add smoky, savory flavor throughout the stuffing.
- Celery knobs
- Contribute an earthy celery flavor and aroma to the stuffing.
- Sugar
- Adds mild sweetness and helps the outside brown during roasting.
The step that matters
Roast slowly. A stuffed, boned bird is dense and thick, so low, slow heat lets the centre cook through before the outside dries out or over-browns.
Swap the white pepper
How well each one fits the dish's main ingredients (turkey, egg, celery, clove, garlic, onion, sugar):

- Gingerfits better
- Parsleyfits better
