Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare

  1. Boil the eggplant whole until tender.

  2. Carefully scrape out the pulp without breaking the shell.

Fill and bake

  1. Mix the pulp with soaked bread, seasoning, eggs, and butter.

  2. Refill the eggplant shells with the mixture.

  3. Sprinkle with cracker crumbs, bits of butter, and a little water.

  4. Bake at 400°F (200°C) for 20 minutes.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggplant
Forms the edible shell and the soft pulp that makes up the filling.
Eggs
Bind the pulp and bread mixture so it holds its shape when baked.
White bread
Soaked bread absorbs moisture and helps give the filling a light, tender body.
Butter
Adds richness and fat, helping the filling and crumb topping brown in the oven.

The step that matters

Scrape out the pulp without breaking the shell. A torn shell cannot hold the filling and may leak during baking. Gentle scraping after boiling keeps the eggplant intact while the flesh is soft enough to remove easily.
