Bake and serve

  1. Refill the eggplant shell with the mixture and sprinkle with bread crumbs.

  2. Bake in a preheated oven at 350°F (175°C) until heated through and the top is browned.

What each ingredient does

Eggplant
Its scooped-out pulp forms the body of the filling, and the shell holds it for baking.
Hard-boiled eggs
Chopped eggs add body and richness to the filling as it sets.
Cream dressing
Adds moisture and richness, helping the filling turn smooth and creamy.
Mushrooms
Add savory, earthy flavor and moisture to the filling.
Bread crumbs
Form a crisp, browned topping on the baked filling.

The step that matters

Bake until heated through and browned. The filling is already cooked, so the goal is to heat it fully and brown the top without drying it out. Watching the color and heat, rather than only the clock, helps avoid a dry or underheated center.
