Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare

  1. Preheat the oven to 350°F (175°C).

Make the batter

  1. Beat the egg yolks and sugar until light.

  2. Add grated chocolate, flour, and beaten egg whites to the mixture.

  3. Spread the batter in a thin layer in a large square pan or jelly cake pans.

  4. Bake until set, then remove from the oven.

Roll and chill

  1. While still warm, spread with stiffly beaten cream and roll the cake.

  2. Place in the refrigerator to cool.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Whipped whites lighten the batter and the yolks add richness and structure when baked.
Sugar
Sweetens the batter and helps the yolks whip to a light, airy texture.
Sweet chocolate
Provides the main flavor and, once melted into the batter, helps the cake set.
Flour
Gives the thin cake enough structure to hold its shape when rolled.
Cream
Adds moisture and richness to the filling inside the rolled cake.

The step that matters

Rolling while still warm. A warm sponge is pliable and flexible, so it can be rolled without cracking. Once it cools, the cake stiffens and is likely to crack along the roll.
