What each ingredient does

Strawberries
Provide the fruit, flavor, and bulk of the preserve.
Sugar
Sweetens the fruit and draws out its juice, helping the preserve set and keep.

The step that matters

Boil for 15 to 20 minutes. Boiling concentrates the sugar and fruit liquid until the mixture thickens. Too little boiling leaves it runny, while overcooking can make it dark and stiff as it cools.
