Ingredients

Directions

The book says “a rather quick oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Prepare the loaf

  1. Cut off a slice from the top of the bread loaf.

  2. Scoop out most of the crumbs, leaving a ½ inch shell.

Fill and bake

  1. Drain the oysters and season with salt, Tabasco or red pepper, and catsup.

  2. Fill the loaf with the seasoned oysters and dot with bits of butter.

  3. Replace the slice cut from the top.

  4. Moisten the loaf with oyster liquor and bake at 400°F (200°C) for 25 minutes, basting frequently with the oyster liquor.

  5. Serve with a cream sauce.

What each ingredient does

Oysters
Provide the main filling, whose briny flavor seasons the bread as it bakes.
Vienna bread
Forms the hollow shell that holds the filling and crisps as it bakes.
Butter
Adds richness and helps the top and exposed bread brown in the oven.
Oyster liquor
Moistens the bread and keeps the filling juicy during baking.

The step that matters

Moisten the loaf and bake with frequent basting. Basting with oyster liquor keeps the bread from drying out while the oysters cook, so the crumb softens and the filling stays moist rather than tough.
