Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Ham
Main protein that is cooked through by slow boiling, becoming tender and juicy.
Brown sugar
Caramelizes in the oven to form a browned, sweet, glossy coating on the surface.

The step that matters

Bake until light brown. Sugar caramelizes quickly at oven heat and can scorch before the coating looks evenly browned. Checking the surface during the short bake keeps the glaze golden rather than burnt.

Swap the mustard

How well each one fits the dish's main ingredients (ham, molasses, pepper, egg, sugar, clove):

  1. Capsicumfits about as well
  2. Mustardthe original
  3. Carrotfits less well
  4. Sweet potatofits less well

Fit is the average pairing score against ham, molasses, pepper, egg, sugar, clove. Candidates are from the same food group and used in at least 100 recipes.
