Pot Roast

Ingredients

Directions

Braise the beef

  1. Wash the beef and place it in a pot with enough water to cover it.

  2. Set over low heat and stew for one hour.

  3. Season with salt and pepper, then continue stewing until tender, adding a little onion.

  4. Remove the meat and pour the gravy into a bowl.

Brown and make the gravy

  1. Add a large lump of butter to the pot, dredge the meat with flour, and return it to the pot to brown, turning often to prevent burning.

  2. Skim the fat off the gravy, then pour it back in with the meat.

  3. Thicken the gravy with flour mixed with water and pour it into a gravy dish.

Serve

  1. Serve the meat on a platter.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Beef
Provides the main meat that becomes tender through slow, moist stewing.
Butter
Adds fat that helps the floured meat brown in the pot.
Flour
Coats the meat to aid browning and thickens the gravy.
Onion
Adds aromatic flavor to the stewing liquid and gravy.

The step that matters

Turning the meat while browning. Floured meat can scorch quickly over direct heat, and the flour burns to a bitter taste. Turning often keeps the coating an even golden brown instead of dark and harsh.

Swap the onion
