Why it works: Celery and pepper match in chemistry and in kitchens. They rank in the top 5% of all ingredient pairs, and cooks put them together in 16,012 recipes. Both carry 4'-methylacetophenone, which smells bitter almond. The science ↓

Coat and fry

  1. Roll each ball in cracker crumbs, then dip in beaten egg, and roll in crumbs again.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Eggs
Bind the mixture together and help the croquettes hold their shape.
Cracker crumbs
Add body to the mixture and form a crisp coating for frying.
Grated meat
Provides the main filling and bulk of each croquette.
Milk
Adds moisture to the mixture so it stays tender inside.
Butter
Adds richness and fat for flavor and tenderness.

The step that matters

Frying in hot lard. The lard must be hot enough to brown the coating quickly. If it is too cool, the croquettes absorb excess fat and turn greasy before the crumb crust sets.

Swap the celery

How well each one fits the dish's main ingredients (meat, milk, egg, butter, onion, pepper):

  1. Parsleyfits better
  2. Thymefits better
  3. Nutmegfits about as well
  4. Celerythe original

Fit is the average pairing score against meat, milk, egg, butter, onion, pepper. Candidates are from the same food group and used in at least 100 recipes.
