Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the cream into a firm, sliceable structure as it cools.
Cream
Provides richness and a light, creamy texture once whipped or thickened.
Sugar
Sweetens the cream and softens its flavour against the floral notes.
Blanched almonds
Add a crunchy, nutty texture that contrasts with the smooth cream.

The step that matters

Dissolve the gelatine fully before adding it to the cream. Undissolved gelatine forms rubbery specks and won't set evenly. It must be fully liquid and well mixed in before folding in the cream, so the mixture sets smoothly throughout.
