What each ingredient does

Strawberries
Provide the main flavour and fruity body of the ice cream.
Granulated sugar
Sweetens the dish and softens the freezing texture by lowering the freezing point.
Cream
Adds fat that gives the ice cream a smooth, rich texture.

The step that matters

Turn the mixture in the freezer until very hard, then add the mashed strawberries.. Adding the fruit to a base that is not yet firm lets it sink or freeze unevenly and can dilute the texture. Chilling the base first helps the fruit distribute evenly and keeps the final ice cream smooth.
