What each ingredient does

Granulated sugar

Lemon and orange rinds
Add aromatic citrus oil and fragrance to the syrup as it boils.
Lemon and orange juice
Adds acidity and bright citrus flavour that balances the sugar.
Maraschino cherries and their liquor
Provide cherry flavour and sweetness from the liquor, plus colour from the fruit.
