What each ingredient does

Strawberries
The fruit whose water evaporates in the sun, leaving concentrated, chewy berries with intense flavor.
Sugar
Draws water out of the fruit and dissolves into it, sweetening it and helping it keep.

The step that matters

Bringing the berries in at night. Sugar draws water out of the fruit by osmosis, and sun heat evaporates it during the day. Covering the berries at night keeps the sugar syrup from being diluted by dew or cooling too quickly, so the drying process continues evenly over the four days.
