What each ingredient does

Strawberries
Provide the fruit flavor and pectin-bearing body that the jam sets around.
Sugar
Sweetens the jam and helps it thicken and keep by binding water.

The step that matters

Cooking from the bottom before stirring. Sugar and fruit on a hot kettle base can scorch before the mixture heats evenly. Letting the bottom cook first and stirring the sugar in gently helps prevent burning and gives an even texture.
