Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Sweetbreads
Provide the main body and savoury meaty base of the croquettes.
Eggs
Bind the ground mixture so the croquettes hold their shape.
Blanched almonds
Add body, richness and a nutty flavour to the filling.
Bread crumbs
Form a crisp, golden coating that browns during frying.

The step that matters

Frying in deep hot oil. The oil must be hot enough to brown the crumb coating quickly; if it is too cool, the croquettes absorb oil, turn greasy and may fall apart before the coating sets.

Swap the almond

How well each one fits the dish's main ingredients (egg, bread):

  1. Peasfits better
  2. Pecansfits better
  3. Lima beansfits about as well
  4. Almondthe original

Fit is the average pairing score against egg, bread. Candidates are from the same food group and used in at least 100 recipes.
