Ingredients

Directions

The book says “a hot oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

Make the dough

  1. Sift the flour and baking powder together into a bowl.

  2. Rub the butter into the flour until well combined.

  3. In a separate bowl, mix the sweet milk, salt, and beaten egg.

  4. Add the milk mixture to the flour and mix to form a soft dough, adding more flour if necessary.

Shape and bake

  1. Roll the dough very thin and cut out large rounds.

  2. Butter the top of each round, fold over, and brush again with butter.

  3. Bake in a hot oven at 400°F (200°C) until golden.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Flour
Forms the structure of the dough once combined with liquid.
Baking powder
Releases gas during baking so the rolls rise and turn light.
Butter
Adds fat that tenderizes the dough and helps it brown.
Sweet milk
Provides moisture that hydrates the flour and forms the dough.
Egg
Binds the dough and adds richness and structure.

The step that matters

Adding the milk mixture to the flour. Adding too much flour or overmixing can make the dough tough and dense, so add flour only as needed to reach a soft dough.
