Ingredients

Directions

Make the custard

  1. Soak gelatin in ¼ cup cold milk.

  2. Beat egg yolks until very light, then add sugar and beat well.

  3. In a double boiler, heat sweet milk, then gradually add the sugar and yolks mixture while stirring.

  4. Stir in the soaked gelatin and cook until thick, stirring constantly.

  5. Remove from heat, strain, and whip until cool.

  6. Fold in the whipped cream and flavor with vanilla.

Set and serve

  1. Line a mold with macaroons, packing them tightly.

  2. Pour the mixture into the mold and pack in ice to congeal.

  3. To serve, place the charlotte in cups made of macaroons, using one for the bottom and four around, fastened with candy syrup.

What each ingredient does

Egg yolks
Thicken the custard and add richness and colour as they cook.
Gelatin
Sets the custard so it holds its shape when chilled.
Double cream
Adds richness and a light, airy texture when whipped and folded in.
Sweet milk
Forms the liquid base of the custard.
Sugar
Sweetens the custard and helps balance the richness of the yolks and cream.

The step that matters

Cook the custard until thick, stirring constantly. Egg yolks can curdle or scramble if overheated or left unstirred, which gives a grainy texture. Gentle, constant stirring cooks them evenly so the custard thickens smoothly before the gelatin sets it.
