Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Heavy cream
Provides fat and richness, giving the ice cream a smooth, creamy texture.
Granulated gelatin
Sets and stabilises the structure so the ice cream holds a smooth body.
Granulated sugar
Adds sweetness and lowers the freezing point, keeping the ice cream softer and scoopable.

The step that matters

Fold in the whipped cream gently. Whipped cream holds air in its structure. Vigorous stirring deflates it, making the ice cream dense and heavy instead of light and airy.
