What each ingredient does

Double cream
Whipped into the mixture, its fat and air give the frozen cream a rich, smooth texture.
Sugar
Sweetens the cream and lowers its freezing point, keeping it soft rather than hard and icy.
Milk
Liquid that dissolves the sugar so it blends evenly into the cream base.
Chopped nuts
Add crunch and nutty flavour that contrasts with the smooth frozen cream.

The step that matters

Add the cherry juice when the mixture begins to freeze. Sugar lowers the freezing point, so the base is only partly firm at this stage. Adding the juice then lets it mix evenly, while a fully frozen base would not blend and a warmer one would turn watery.

Swap the pecans

How well each one fits the dish's main ingredients (almond, walnut, cream, sugar, milk, vanilla):

  1. Pistachiofits better
  2. Hazelnutfits better
  3. Brazil nutfits better
  4. Pecansthe original

Fit is the average pairing score against almond, walnut, cream, sugar, milk, vanilla. Candidates are from the same food group and used in at least 100 recipes.
