What each ingredient does

Green tomatoes
Provide bulk and tart body that holds up to long simmering.
Cabbage
Adds crunch and bulk that holds its texture in the pickle.
Coarse sea salt
Draws water out of the vegetables so they soften less and stay crisp.
Vinegar
Adds acidity that preserves the mixture and sharpens its flavor.
Brown sugar
Adds sweetness that balances the sharpness of the vinegar.

The step that matters

Cook the mixture until done. The record gives no time or cues for doneness. Cooking too little leaves raw, crunchy vegetables and a weakly preserved mixture, while cooking too long turns the vegetables mushy. Check texture and taste as you go.

Swap the onion

How well each one fits the dish's main ingredients (tomato, cabbage, celery, cucumber, pepper, vinegar, sugar):
