Ingredients

Directions

The book says “a moderate oven”. The 400°F (200°C) in the steps is the modern equivalent, not the book's own figure.

  1. Preheat the oven to 400°F (200°C).

  2. Grease a baking dish with butter.

  3. Cover the bottom with fine bread or cracker crumbs.

  4. Add a layer of boiled corn, then alternate layers of crumbs and corn until you have three or four layers.

  5. Sprinkle each layer with salt, pepper, and bits of butter.

  6. Moisten the top layer with a little milk.

  7. Bake for about 20 minutes.
