Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Graham flour
Forms the bulk of the pudding and gives it a hearty, coarse-textured structure.
Molasses
Adds moisture, dark color, and a deep sweetness to the pudding.
Sweet milk
Moistens the flour so it forms a cohesive, pourable batter.
Raisins
Add chewy pockets of sweetness and moisture throughout the pudding.

The step that matters

Steam the pudding for the full time. Steaming cooks the batter gently and evenly with moist heat, so the pudding sets through and stays tender. Cutting the time short leaves the centre dense and undercooked.

Swap the orange

Fit is the average pairing score against milk, flour, molasses, raisin, ginger, cinnamon, clove. Candidates are from the same food group and used in at least 100 recipes.
