Why it works: Raisin and flour match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 9,075 recipes. Both carry isobutyraldehyde, which smells malty, green. The science ↓

Ingredients

Directions

The book gives no oven temperature. The 400°F (200°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the filling

  1. Preheat the oven to 400°F (200°C).

  2. In a bowl, combine sugar, chopped rhubarb, seeded raisins, egg, and flour, and mix until well combined.

Assemble and bake

  1. Prepare a pie crust and fill it with the rhubarb mixture.

  2. Cover with a second crust and seal the edges.

  3. Bake until the crust is golden brown.
