Cream Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Beat the egg whites until stiff and set aside.

  3. In a separate bowl, beat the egg yolks with the sugar until light and fluffy.

  4. Add the sweet cream to the yolk and sugar mixture and mix well.

  5. Sift the flour, baking soda, and cream of tartar together.

  6. Gently fold the flour mixture into the cream mixture, then fold in the beaten egg whites last.
