Why it works: Sugar and vanilla are a kitchen classic. They rank in the top 8% of all ingredient pairs, and cooks put them together in 35,032 recipes. Both carry beta-damascenone, which smells apple, rose. The science ↓

Ingredients
Directions
The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.
Prepare the batter
Preheat the oven to 350°F (175°C).
In a large bowl, beat the egg whites with a pinch of salt and cream of tartar until stiff peaks form.
Gradually add the sugar while continuing to beat until well combined.
Gently fold in the sifted flour and vanilla extract.
Pour the batter into an ungreased tube pan.
Bake and cool
Bake for 50 minutes.
Invert the pan immediately after removing it from the oven and let it cool completely before frosting.
Transcribed from a scanned cookbook and modernised for today's kitchens. Where the book gave no heat or time, or said "a moderate oven", the temperatures and times here may be modern equivalents rather than the book's own figures.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs
What each ingredient does
- Egg whites
- Whipped into foam that traps air, giving the cake its light, airy structure.
- Sugar
- Stabilizes the whipped foam and adds sweetness and a tender crumb.
- All-purpose flour
- Provides the gluten and starch that set the cake's structure as it bakes.
- Cream of tartar
- Acidifies the egg whites, helping them whip to a stable, stiff foam.
The step that matters
Fold in the flour gently. Folding preserves the air trapped in the whipped egg whites. Stirring or deflating the foam makes the cake dense and reduces its rise.
Swap the vanilla
How well each one fits the dish's main ingredients (egg, cream, sugar, flour):
- Raisinfits about as well
- Vanillathe original
- Figfits less well
- Strawberryfits less well
Fit is the average pairing score against egg, cream, sugar, flour. Candidates are from the same food group and used in at least 100 recipes.
