Watermel Cake

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Preheat the oven to 350°F (175°C).

  2. Cream together the sugar and butter until light and fluffy.

  3. Beat the egg whites until stiff peaks form.

  4. Dissolve the baking soda in the sweet milk and add to the mixture.

  5. Sift the flour with the cream of tartar and gradually add it to the batter.

  6. Gently fold in the beaten egg whites.

  7. Take out a little more than half of the batter and mix in red sugar to color it.

  8. Stir in the raisins into the colored batter.

  9. Pour the colored batter into the center of a greased round loaf pan and cover with the remaining batter.

  10. Bake until a toothpick inserted in the center comes out clean.
