Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Gelatine
Sets the mixture into a firm dessert that holds its shape.
Egg whites
Whipped to a foam, they make the dessert light and airy.
Cream
Adds richness and a smooth, creamy body.
Sugar
Sweetens the dessert.
Milk
Liquid that softens the gelatine before it is used.

The step that matters

Folding in the beaten egg whites. Fold gently so the whipped foam keeps its air. Overmixing deflates the whites, and the set dessert turns dense instead of light.
