Why it works: Cinnamon and clove match in chemistry and in kitchens. They rank in the top 1% of all ingredient pairs, and cooks put them together in 14,189 recipes. Both carry ethyl cinnamate, which smells sweet, balsamic. The science ↓
Tomato Pickles
Ingredients
Directions
Prick each tomato with a darning needle.
In a jar or tub, layer the tomatoes and sprinkle liberally with salt.
Add a layer of sliced onions and salt as before.
Continue layering until the jar is full.
Let the mixture sit for three days.
After three days, wipe off the salt.
Prepare a hot pickle by boiling vinegar with cinnamon and whole cloves.
Pour the boiling vinegar over the tomatoes and onions.
Place a weight on top to keep them submerged in the vinegar.
Store in a cool place; they will keep without sealing in stone jars.
