To Stuff and Roast a Calf's Liver

Ingredients

Directions

Prepare the liver

  1. Make a lengthwise hole in the calf's liver, but do not cut all the way through.

  2. Prepare the stuffing by mixing the chopped parboiled liver, minced bacon fat, powdered herbs, grated bread, powdered spice, pepper, and salt.

  3. Fill the hole in the liver with the stuffing and lard the outside with bacon fat.

  4. Dust the liver with flour.

Roast and serve

  1. Roast the liver, basting with butter until cooked through.

  2. Serve hot with gravy sauce that includes a splash of wine.

Ranks compare each pair with 20,000 random ingredient pairs on CompKitchen. How we score pairs

What each ingredient does

Calf's liver
Forms the main body of the dish and carries the stuffing.
Bacon fat
Adds moisture and richness to the stuffing and coats the outside of the liver.
Grated bread
Soaks up fat and juices in the stuffing, helping it hold together and stay moist.
Butter
Basting adds fat to the surface, promoting gentle browning and a glossy finish.
Flour
Dusted on the outside, it helps the surface brown and gives the coating a light crust.

The step that matters

Roast until cooked through, not beyond. Liver turns dry and grainy when overcooked, because its proteins tighten and lose moisture with prolonged heat. Basting with butter helps keep the surface moist while the centre cooks through.
