What each ingredient does

Sturgeon
Is the main fish that is cleaned, salted, and boiled until cooked through.
Melted butter
Adds richness and fat to the served fish, softening its flavour.
Flour
Dusted on the fish before boiling, it helps coat the surface and gives a light texture.
Mushroom catsup
Adds savoury, umami depth to the sauce poured over the fish.
Lemon pickle
Adds sharp acidity and bright citrus flavour to the sauce.
Pepper vinegar
Adds acidity and gentle heat to the sauce served with the fish.

The step that matters

Skim the water carefully while cooking. Foam and impurities rise to the surface as the fish boils. Removing them keeps the cooking liquid clean and the fish's flavour and appearance clear.
