To Dress Cod Fish

Ingredients

Directions

The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

  1. Boil the cod fish until tender and remove the bones.

  2. Boil and chop an equal quantity of Irish potatoes or parsnips and onions.

  3. In a bowl, combine the fish, potatoes, onions, melted butter, nutmeg, pepper, salt, and brandy or wine.

  4. Mix well in a mortar; if too stiff, add cream or thickened milk to liquify.

  5. Place pastry in the bottom of a dish, pour in the mixture, and bake at 350°F (175°C).

  6. For variation, shape into patties and bake instead.
