What each ingredient does

Cherries
Provide the fruit that softens during stewing and dries into a chewy, concentrated texture.
Brown sugar
Sweetens the cherries and, as the syrup is absorbed, helps preserve them and add sweetness.

The step that matters

Stewing the cherries in the syrup. Stewing for the full 15 to 20 minutes lets the sugar syrup penetrate the fruit. Cooking too briefly leaves the cherries under-sweetened and less preserved, while overcooking can break them down and make them mushy.
