To Pickle Radish Pods

Ingredients

Directions

  1. Cut radish pods into nice bunches when fully formed; they should be young and tender.

  2. Pour boiling water mixed with coarse sea salt over the pods and cover with a thick cloth and a pewter plate to keep in the steam.

  3. Repeat this daily until the pods turn a good green color.

  4. Place the pods in cold vinegar with mace and whole pepper.

  5. Mix a little turmeric with a small amount of oil and stir it into the vinegar to enhance the color of the pods.
