The book gives no oven temperature. The 350°F (175°C) in the steps was added when the recipe was transcribed, as a starting point.

Prepare the apple base

  1. Pare, core, and steam the apples until tender.

  2. Press the cooked apples through a sieve.

  3. Add butter, sugar, egg yolks, and milk to the apples. Mix well.

  4. Pour the mixture into baking cups.

  5. Bake at 350°F (175°C) for 20 minutes.

Make the meringue and bake

  1. Beat the egg whites until stiff.

  2. Add sugar to the beaten egg whites. Mix.

  3. Heap the egg white mixture over the cups.

  4. Dust with powdered sugar.

  5. Brown in the oven.

  6. Serve cold.

What each ingredient does

Tart apples
Provide the main fruit body and tartness that balances the sweet custard.
Egg yolks
Thicken the apple base and add richness as they set when heated.
Egg whites
Whip into a foam that forms the light, browned meringue topping.
Milk
Adds moisture and softness to the apple base, helping it set gently.
Sugar
Sweetens the base and helps stabilise the whipped egg whites and browning.

The step that matters

Beat the egg whites until stiff. Egg whites must be whipped until they hold firm peaks; under-beaten whites collapse and weep, while sugar added once they are foamy helps them stay stable and brown evenly in the oven.

Swap the apple

How well each one fits the dish's main ingredients (butter, sugar, egg, milk):

  1. Vanillafits better
